
Do you like Filipino lumpia? Me too! I love the crunchy taste of the wrapper and the flavors of the vegetables, beef and pork mix that combine to make the lumpia, along with the sweet chili sauce of course. It's finger food and I'm a gluten for all kinds of finger food. The other day we had the gardener that maintains the yard in our apartment complex knock on our door telling us that he is putting on a party for some friends this Saturday and so he wanted to ask us if we could make him 100 lumpia fried. I told him that we can do it. In the past we have made up to 300 lumpia which was a enormous task to prepare, let alone fry them. Well, it's helps make us a little extra money on the side. I use a simple recipe of 1lb ground beef, 1lb ground pork, chopped onion, chopped carrot, 1 large jicama, 3-4 garlic cloves, 1-2 eggs, salt and pepper to taste. Mix everything together, cover and store in refrigerator if not using right away.
